Before I really got into scratch baking this was the cake that I always made. Back then I made it with Kahlua, and more recently with Bailey’s. Although it’s made with a box mix, I’ve jazzed it up a little so no one will ever know! It’s perfect for when you just want something delicious and don’t want to slave in the kitchen. It’s also impressive enough to serve to guests. It’s incredibly moist, and has a wonderful Baily’s flavor. It’s extremely versatile, you can make it into cupcakes, a layer cake, bundt, whatever tickles your fancy. It’s also extremely delicious without any frosting. I like to make a little glaze just to kick it up a notch.

Baily’s Bundt Cake
1 box yellow cake mix (I prefer duncan hines)
1 box chocolate pudding
3/4 cup Baily’s Irish cream
All ingredients required for cake as directed by box mix
In a large mixing bowl, mix together cake mix, pudding, eggs, water, oil, and Baily’s. Mix at low speed to incorporate, then increase speed to medium and mix for about 2 minutes. Bake according to package directions.
6 tbsp powdered sugar
2-3 tbsp Bailey’s Irish Cream
In a small bowl, mix powdered sugar and Bailey’s until smooth and lump free. You may adjust consistency as desired. Pour over cooled cake.
